Baja Fish Taco Bowl

Ingredients:

Fish:

  • 1.5 pounds/680 grams of thawed/fresh cod or mahi mahi

  • 2 TBSP avocado or olive oil

  • 1.5 TSP chili powder

  • ½ TSP cumin

  • ½ TSP garlic powder

  • ½ TSP onion powder

  • ½ TSP smoked paprika

  • ½ TSP salt

Veggies:

  • 8 cups/800 grams cauliflower rice

  • 3 cups/210 grams coleslaw mix

  • 2 TBSP avocado or olive oil

  • ½ TSP chili powder

  • 2 TSP lime zest, divided

  • 3 TBSP lime juice, divided

  • ¼ cup mayo (use a brand which has template compliant ingredients or see HERE for a recipe)

  • 2 TBSP chopped cilantro, divided

  • ½ TSP smoked paprika

Instructions:

Fish:

  1. Place the fish on a plate.  In a small bowl, combine the chili powder, cumin, garlic powder, onion powder, smoked paprika and salt.

  2. Pour the spice mix over the fish and press into both sides.

  3. Set a large skillet over medium heat and pour the oil in the pan

  4. Place the code in the pan and cook for 2 minutes, then flip and cook for 3 minutes.

  5. Set fish aside.

Veggies:

  1. In the same skillet, add the oil and the cauliflower rice.  Cook for 4 minutes, stirring occasionally.

  2. Add the chili powder, 1 TSP of lime zest and 2 TBSP of lime juice.  Stir to combine.

  3. Cook for 3 to 5 minutes or until the cauliflower rice is cooked through.  Season with salt and pepper to taste.

  4. In a medium bowl, combine the mayo, 1 TBSP of lime juice, 1 TSP of lime zest, cilantro and smoked paprika.  Whisk until combined, then add the coleslaw mix and toss to coat.  Season with salt and pepper to taste.

Place cauliflower rice in a bowl and top with fish and coleslaw mix.  Enjoy!
