Twice Baked Potato
Who doesn't love a twice baked potato? These are very versatile, because you can stuff them with anything you like. What is laid out below is just an example. The recipe applies to just one potato but you can easily increase it for multiple potatoes. Feel free to mix up the protein and veggie options!
Prep Time: 10 minutes (doesn’t include time to cook shredded chicken)
Cook Time: 1 hour, 15 minutes
Total Time: 1 hour, 45 minutes
Ingredients:
1 Baking potato ~300-400 grams, medium
110 grams of cooked, shredded chicken thighs
100 grams finely chopped broccoli (If you want the broccoli soft, use slightly cooked)
Olive Oil (to coat potato)
2 TBSP Unsweetened Almond Milk Or Coconut Milk
¼ TSP each Salt & Pepper
½ TSP Garlic Powder
Instructions:
Clean and puncture potato(es) (with a fork)
Coat generously with olive oil and salt
Bake on a cookie sheet at 350 for 1 hour(or until fully cooked through)
Remove from oven and cut lengthwise(not all the way through, just a slit down the top, enough to allow center to cool a bit)
Allow the potatoe to cool for about 15 min.
Carefully scoop out the center of the potato into a bowl, try not to tear up the skin but no worries if they fall apart...you can put them back together.
Add: About 1/2 cup unsweetened almond milk(or even light coconut milk) Salt, Pepper, Garlic powder to the sweet potato you scooped out. Mix well, you want a thick, creamy consistency (think mashed potatoes). Then mix in your chicken and broccoli.
Spoon mixture back into the skins and bake again for 15 min!

This is a really flexible recipe. You can have lower carbs with smaller potatoes, add less (or more chicken if you need), go meatless, etc. Here are some other topping ideas (keep in mind this may result in a different template breakdown):
