Stuffed Delicata

Ingredients:

2 small sized Delicata Squash
1/2-1 Cup Large Onion
4 oz Shiitake Mushrooms
1 lb Ground Turkey 4-5 Garlic Cloves
Extra Virgin Olive Oil
1 Cup Spaghetti Sauce (NO ADDED SUGAR)
1 Can Of Fire Roasted Tomatoes •

DIRECTIONS FOR THE DELICATA:
Cut the top and bottom off, cut it in half the long way, then scoop the seeds out. If you’re feeling particularly ambitious you can roast the seeds. They are delicious!

Instructions

1 Line a sheet tray with parchment paper and preheat the oven to 400°
2 Cut the top and bottom off the squash, then cut into 1/2 long ways 3 Lay down on the sheet tray and sprinkle with salt.
4 Bake until tender and browned on the edges, about 15 to 20 minutes

DIRECTIONS FOR THE STUFFING:

In a large pan sauté up sliced onions, mushrooms and garlic- then set to the side in a bowl. Then cook the ground turkey on medium heat, breaking up the meat into small pieces as it cooks until the turkey is cooked through and is browned. Add the onion, mushroom, garlic and mix thoroughly. Then add the cup of spaghetti sauce to the pan, salt and pepper as desired and cook, stirring for 5 minutes, on low. •
Divide evenly between the squash, top with cheese if desired and bake for 10 minutes.
