Coconut Rice

A yummy side dish to go along with any of your protein choices!


Inspired by 40 Aprons


Ingredients:

  • 1 1/2 cup/300 grams basmati rice uncooked

  • 1 (13.5-ounce)/1.5 cup/405 grams can coconut milk

  • 1 1/4 cup water or coconut water

  • 1 tablespoon unrefined coconut oil

  • 1/2 teaspoon salt

  

Instructions:

  1. Combine all ingredients in a medium-sized saucepan.

  2. Bring to boil over medium-high heat. Stir, then immediately reduce heat to medium-low. Cover and cook until all liquid is absorbed.
