WINTER SALAD

Serves - 6

INGREDIENTS:

  • 1/2 cups raw chopped walnuts walnuts (if you want more flavor you can get the candied walnuts, but they have a high amount of sugars) (2 fat servings)

  • 6 cups mixed greens

  • 2 cups arugula

  • Pomegranate seeds from 1 fruit (3 carb servings)

  • 3/4 cup dried cranberries (3 carb servings)

  • 4 ounces goat cheese, crumbled (you can sub any cheese of your choice)


Pro Tip:
You can add any additional toppings you like! Apples, beets, pecans, bacon etc.

EPIURIOUS CITRUS SALAD DRESSING (~1.5 cups yield)

INGREDIENTS:

  • 1 small shallot, finely chopped

  • 3/4 cup olive oil (12 fat servings)

  • 1/4 cup Champagne vinegar or white wine vinegar

  • 3 tablespoons fresh lemon juice

  • 2 tablespoons fresh orange juice

  • 1/4 teaspoon finely grated lemon zest

  • Kosher salt, freshly ground pepper

  • freshly ground pepper

SALAD DRESSING INSTRUCTIONS:

Combine first 6 ingredients in a small jar; season vinaigrette to taste with salt and pepper. Shake to bled. This dressing can be made 1 week ahead, cover and chill. Shake before using.

SALAD INSTRUCTIONS

Add the greens to a large salad bowl. Add the pomegranates, cranberries,  and walnuts. Gently toss in ¼ cup or less of the salad dressing. Top with goat cheese
