Miranda's French Toast

If anyone knows Miranda they know her LOVE for French toast. With Mother's Day around the corner we thought we would honor our favorite Mama with her favorite breakfast for this weeks recipe. This template compliant French toast is super simple and great for those special occasions. We came up with our own version of "syrup" that will work for the template. If you prefer the old fashion stuff - go for it!

Ingredients

  • 6 slices of whole grain bread

  • 2 eggs (2 eggs if its more than 4 slices)

  • 1/2 cup of unsweetened almond milk

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • 2 tsp coconut oil or any oil for cooking

  • Optional toppings

    • Coconut Oil/cinnamon

    • Nut butter of choice

    • Bananas or berries

    • 2 tsp coconut oil mixed with cinnamon or use nut butter

  • Optional Sides

    • egg whites

    • sautéed spinach

INSTRUCTIONS 

  1. In a bowl whisk eggs, almond milk, cinnamon, and vanilla extract.

  2. In a pan melt a little coconut oil on medium/high heat.

  3. Take the bread and dip both sides into the whisk ingredients in the bowl.

  4. Add the bread to pan and fry 1-2 minutes each side or until golden brown.

  5. Coconut syrup 

    • Melt 1 tbsp of coconut oil in the microwave for 30 seconds. Add cinnamon and top over French toast.

For 1 serving of French toast the protein and fat are pretty minimal once you spread them over the 4-6 pieces of toast. Have your normal serving of protein, but deduct roughly 1/4 from your meals fat serving.
