Hawaiian Chicken Burgers

These Hawaiian burgers are the perfect meal for those warmer summer days. The combination of the salty burger with the sweet pineapple, makes for the perfect pairing!If you have a BBQ use it! If not, a cast iron pan works perfect!

Ingredients:

  • 32oz/960g ground chicken 

  • 1 tablespoon coconut aminos

  • 2 teaspoons cold-pressed sesame oil

  • 2 cloves garlic, minced

  • 1 teaspoon peeled and minced fresh ginger

  • 1 teaspoon salt

  • ¾ teaspoon sesame seeds

  • ¼ teaspoon crushed red pepper

  • ¼ teaspoon cracked black pepper

  • 6 fresh pineapple rings or sliced into strips. Canned is OK but look for JUST pineapple. 

Optional sides/toppings:

  • Mixed greens or butter lettuce 

  • Yellow onion 

  • Tomatoes 

  • Rice or potatoes 

  • Avocado 

Preparation Instructions:

  1. Combine ingredients (except pineapple) into a bowl and form 6 patties. Place patties in the fridge or freezer for 5-10 minutes. This helps them stick together better when you grill them.

  2. While the burgers sit in the freezer, slice onions and pineapple. 

  3. In a pan on medium heat with a LITTLE oil add sliced onions. Once they start to cook up, turn top low heat and allow them to caramelize. 

  4. Heat a grill or pan to medium heat and grill the burgers for about 4-5 minutes on each side, until cooked through.

  5. Grill the pineapple for 1 minute on each side, then place on each burger.

  6. Top your burger with whatever veggies you like (example: butter lettuce, slice of tomato, onion slice), and enjoy with fork and knife or between 2 piece of butter lettuce.

Template Adjustments:

 This recipe is primarily a protein recipe. The instructions suggest making 6 patties, however you could make them larger or smaller to fit your meal proportions. An option for a carb to accompany this burger is rice, potatoes or anything you prefer.  This has a little mix greens, but feel free to toss in your favorite veggies! 

Homemade Mayo 

Ingredients:

  • 1 Egg

  • 1.25 cup Extra light tasting olive oil 

  • 2 TBSP Lemon Juice 

Preparation instructions:

  1. Break egg and add lemon juice into your immersion blender container. Leave to sit at room temperature for 30 minutes to 2 hours.

  2. Add 1/4 cup of oil to container. Blend until ingredients are combined.

  3. Pour the remaining 1 cup of oil extremely slowly...the smallest drizzle at a time while blending together. This may take 2 to 3 minutes. You will eventually see the consistency of the mixture become more mayonnaise like (if it doesn't, you may have added the oil too quickly.)

This recipe is completely fat. You can take 1/20th of the recipe for 1 serving of fat to add in as a dipping sauce for potatoes, mix in with tuna or shredded chicken, etc.
