Avocado Deviled Eggs

December tends to be a month where there are lots of get togethers which tend to have a lot of food.  These recipes are some options for tasty dishes you could bring to an event to help keep you on your nutrition plan!

Cook Time: 12 minutes

Total Time: 22 minutes

Ingredients:

  • 6 Large eggs (Pro-tip: Older eggs are easier to peel than fresh eggs after they have been hardboiled)

  • 1 Large ripe avocado

  • 1 tablespoon lime juice or lemon juice

  • 1 tablespoon finely chopped red onion

  • 2 tablespoons finely chopped cilantro

  • 1/4 teaspoon sea salt or kosher salt

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon smoked paprika or regular paprika

 

Instructions:

  1. Cover the eggs in a saucepan with water

  2. Heat the pot on high heat and bring the water to a full rolling boil.

  3. Turn off the heat, keep the pan on the hot burner, cover, and let sit for 10-12 minutes.

  4. Strain the water from the pan and run cold water over the eggs to cool them quickly and stop them from cooking further.

  5. Peel your eggs.

  6. Cut the eggs lengthwise, remove the yolks, and place egg whites aside.

  7. Add egg yolks, avocado, red onion, lime juice, cilantro, salt, and pepper to a small bowl. Mash and stir well to combine (you could even process in a food processor to make it smoother.)

  8. Arrange egg white halves on a large platter. Fill the egg halves with avocado/egg yolk mixture. If you have a piping bag this can make the process a little smoother. Garnish with a pinch of paprika and extra cilantro if desired.
