Crispy Chicken

This recipe comes to you from our very own Coach Mazie! She has shared some of her family fave recipes, starting with this delicious chicken dish that can be paired with a side of your choice!

INGREDIENTS

  • 4 skinless, boneless chicken breasts ~ 6 ounces/180 grams each (36 servings of protein)

  • 2 tbsp Ghee (2 servings of fat)

  • ½ cup coconut flour (3 servings of fat)

  • 1 tbsp kosher salt

  • fresh ground black pepper and garlic salt

INSTRUCTIONS

  1. Place the chicken in between two pieces of parchment paper, then smash breasts with a meat pounder. Flatten to about a ½ inch thick.

  2. Melt the Ghee over a medium heat in a large cast iron skillet.

  3. In a large bowl, mix the coconut flour, salt, garlic powder, and some pepper. Lightly coat the chicken in the flour mix. Pat off excess.

  4. Place the chicken flat in the iron-ghee’d skillet. Allow to cook 3-4 minutes undisturbed. Don’t overcrowd the skillet. Flip the breast over, and cook the other side for another 3-4 minutes or until the exterior is crisp and golden brown.

  5. Transfer the cooked chicken to a wire rack, and tent it with foil while you fry the remaining pieces.

  6. Slice. Serve. Add salsa, guacamole, and Enjoy.
