Blueberry Mandarin Salad
This is the perfect salad for a summer BBQ or a hot day! Feel free to add chicken, steak, tofu or any protein option you prefer!

Ingredients:
2-3 cups spinach and arugula blend
3/4 cup blueberries
1/4 cup pistachios, shelled
8 oz mandarin orange slices
4-6 tbsp balsamic vinegar
Instructions:
Divide the leafy greens into 2 bowls.
Top with blueberries, mandarin slices, and pistachios. Drizzle balsamic vinegar (2 to 3 tbsp per bowl).
Note: Another way to do this combination is to mix everything in a large bowl and make sure the balsamic vinegar gets spread evenly across the salad contents.
