Chicken Zucchini Noodle Salad

This salad is a yummy summer salad to throw in the mix!

Ingredients:

  • 230 grams cooked chicken, shredded or chopped

  • 4 cups zucchini noodles, raw

  • 1 cup cucumber, diced

  • 1/2 cup cherry or grape tomatoes, cut into thirds or fourths

  • salt & pepper

  • 4 TBSP Italian Dressing

  • 3 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • 1/8 tsp garlic powder

  • 1/8 tsp dried oregano

  • 1/8 tsp dried basil

  • 1/8 tsp onion powder

  • 1/8 tsp crushed red pepper

  • 1/8 tsp salt

  • 1/8 tsp pepper

  • 1/8 tsp lemon juice


Instructions:

  1. Cut zucchini noodles so they are not too long.

  2. Salt your zucchini noodles liberally.

  3. Spread zucchini noodles on a paper towel. Add a paper towel on top and press down.  Leave the zucchini noodles pressed between the paper towels for 15 minutes to an hour, pressing down occasionally. This will help remove excess water.

  4. Combine Italian Dressing ingredients in a jar and shake.

  5. Heat 1 tbsp of your Italian Dressing in a skillet on medium heat.

  6. Once the skillet is hot, toss in your zucchini noodles and stir. Cook for 1 to 2 minutes. Stir. Remove zucchini noodles from the skillet using tongs so you can leave any excess liquid in the pan.

  7. Toss zucchini noodles, tomatoes, cucumber, and remaining 3 tbsp of Easy Homemade Italian Dressing together in a large bowl.

  8. Serve and enjoy!
