Hulk Pancakes

Hulk Pancakes

This recipe is a community favorite created by our very own Brittany Moreno! This fun spin on pancakes is one the whole family will enjoy!

Prep time: 5-17 min
Cook time: 5-7 min
Total time: Around 15 min

Ingredients:

  • 1/3 cup/30 grams oats

  • 1/2 cup/4 egg whites

  • 1/2 cup/70 grams greek yogurt

  • 2 TSBP Peanut butter 

  • 1/2 cup frozen berries

  • Handful of spinach

  • Cinnamon

Instructions:

  1. Blend together oats, egg whites, greek yogurt, spinach and cinnamon.

  2. Pour pancake batter into a frying pan (or waffle iron) heated to medium heat.

  3. Once you see small bubbles on the top and it looks like they are starting to be more cooked, flip.

  4. Once all pancakes are cooked (repeat as many times as necessary), top with peanut butter (or your nut butter of choice).

  5. Warm the berries on the stove top with a bit of water or in the microwave until the berries are slightly liquified.  Pour on top of pancakes and enjoy!
