Spinach and Mushroom Burgers
Ingredients:
16oz Extra Lean Ground Beef
1 TSP Coconut oil
½ Cup Mushrooms
2 Cups Baby Spinach chopped
1 TSP Sea salt
1 TSP Black Pepper
1 TSP Basil
Preparation Instructions:
In a medium size pan, heat the coconut oil over medium heat.
Add the mushrooms and sauté for approximately four minutes (you can mix up the veggies if you like!)
Stir in the chopped spinach and cook for an additional three minutes.
Remove the vegetables from the heat and let them cool for about 20-30 minutes.
In a large bowl, mix the cooled vegetables with the ground beef, basil, salt and pepper.
Mix ingredients well and form into four patties.
Add the patties to the grill or skillet and cook until desired doneness.

This recipe is primarily protein with some added veggies. Add your fat (guacamole is great) and carb of choice!
NOTE: Since the mushrooms are included:
You may slightly reduce the veggies on the side
Weigh the cooked patties and allow for a small amount more than allotment. Example: for 4 oz. of beef, you can weigh 4.25oz of cooked patties since the veggies took up more weigh. It’s not exact, but it is close.
