Ground Beef Chili 

Nom Nom Paleo 

Ingredients:

  • 1 tablespoon avocado oil, ghee, or cooking fat of choice

  • 1 large yellow onion, diced

  • 1 small red bell pepper, diced

  • Diamond Crystal kosher salt

  • 2 tablespoons tomato paste

  • 4 garlic cloves,minced

  • 2 pounds 90% lean ground beef 

  • 3 tablespoons chili powder

  • 1 tablespoon dried oregano

  • 1 tablespoon ground cumin

  • ¼ teaspoon cayenne pepper (optional)

  • 1 (14.5 ounce) can fire-roasted diced tomatoes, drained

  • 1 cup chicken broth or bone broth

  • 2 teaspoons fish sauce

  • 1 tablespoon apple cider vinegar (optional

Optional toppings:

  • Sliced avocado

  • Slivered scallions

  • Finely diced white onions + minced cilantro

  • Lime wedges

Instructions:

  1. Add 1 Tbsp of cooking oil to a large pot on high-medium heat

  2. Once oil is hot add in diced  onions and bell peppers with a sprinkle of salt. Cook for roughly 3 minutes or until veggies are soft

  3. Stir in the tomato paste and minced garlic and cook about 30 seconds

  4. Add in ground beef, plus one Tbsp of salt. Break meat up with a spatula

  5. When most of the ground beef is no longer pink (5 to 7 minutes), stir in the chili powder, oregano, cumin, and cayenne pepper (optional). Once the spices are mixed in well, toss in the drained diced tomatoes, broth, and fish sauce. Make sure to stir in everything well.

  6. Turn the stove top to medium-low. Simmer it in a partially-covered pot or Dutch oven over for 1 hour or until the flavors meld.

  7. Serve in a bowl with optional topping!

Ok, so here is where the math is fun. The recipe calls for 2 pounds of ground beef, which is ~900g. For those of you who are following "cooked" meat serving sizes, this translates to roughly 675g cooked. Dividing into 1.5oz/45g servings of meat makes this whole recipe 15 servings. Since there are lots of veggies in here, the recommendation to portion it out is to do the following:

1. Cook the recipe
2. weigh the entire recipe once cooked
3. portion out accordingly. If you want 4 protein servings, you will have 4 times X grams (where X is the weight per serving you figured out after cooking the entire recipe) 

Some recommended carb options would be to add rice or sweet potatoes to your chili's serving.
