Warm Chipotle Lime Sweet Potato Salad

Top this salad with a yummy burger or grilled chicken!

Total Time: 25 minutes
Servings:  2-6, depending on your carb servings

Ingredients:

  • 2 medium (~300 grams each) sweet potatoes, cubed

  • 2 cups kale or spinach, roughly chopped (heaping cups)

  • 1 small bell pepper, diced

  • 1/2 small red onion, sliced

  • 4 slices uncured bacon cooked and chopped

  • 1/4 cup Mayo (see homemade Chipotle Lime Mayo recipe below)

  • 4 cloves garlic, minced

  • 1½ Tbsp. cooking fat of choice (ghee, avocado oil, olive oil)

  • Salt & black pepper to taste

Chipotle Lime Mayo Ingredients:

  • 1/4 cup mayo

  • 1/4 lime, juiced

  •  ⅛ tsp. chipotle powder + more to taste

Instructions:

  1. Add 1 Tbsp. of cooking fat to a large skillet on medium-high heat. Once hot, add cubed sweet potatoes. Dash with a little sea salt and black pepper. Sauté for about 10-12 minutes stirring throughout. Sweet potatoes should be cooked through.  Pro tip: Cover the skillet to help speed up the cooking process!

  2. Then add the remaining 1/2 Tbsp. cooking fat, diced pepper, sliced onion, and garlic. Sauté for another 10 minutes.

  3. Then add kale and chopped bacon and sauté for 2-3 minutes longer until kale is slightly wilted.

  4. Transfer to a bowl (or leave in skillet) and gently stir in Chipotle Lime Mayo. Serve warm. Leftovers can be served warm or cold for up to 5 days.

  5. Garnish with fresh parsley and green onions, if desired.

Mayo Preparation Instructions (makes 20 servings of 1 TBSP each):

  1. Break egg and add lemon juice into your immersion blender container.  Leave to sit at room temperature for 30 minutes to 2 hours.

  2. Add 1/4 cup of oil to container.  Blend until ingredients are combined.

  3. Pour the remaining 1 cup of oil extremely slowly...the smallest drizzle at a time while blending together.  This may take 2 to 3 minutes. You will eventually see the consistency of the mixture becomes more mayonnaise-like (if it doesn't, you may have added the oil too quickly.)
