Sweet Potato Casserole

For the month of November we will be doing some “healthier” side dishes for your Thanksgiving dinner. They won’t fit the template PERFECTLY, but we will show you some simple ways to take your classic dishes and make them slightly better! This week is spin off the classic sweet potato casserole. If you want to spice it up you can throw some nuts on the top to add a little crunch!

Prep Time: 30 minutes

Cook Time: 30 minutes

Total Time: 60 minutes

Ingredients:

  • 3 cups cooked and mashed sweet potatoes

  • 2 tablespoons ghee

  • 2 eggs lightly beaten

  • 1/2 teaspoon cinnamon

  • 1 ripe banana mashed

Instructions:

  1. Preheat oven to  350º F.

  2. Stir together all sweet potato casserole ingredients.

  3. Spray 9x9" pan with cooking spray. 

  4. Spoon sweet potato casserole into pan.

  5. Bake at 350º F for 30 minutes.
